I think the hottest I've been able to get my Sun Oven is around 325. I guess beans would just take a bit longer.
Anyway, I mostly use it for baking and lately I've used it with the reflectors almost all the way down as the 'warm, draft free place' to let my dough rise. Works like a charm here in central VA.
